Fantastic Mayo-Free Egg Salad Sandwiches

OK so I made it clear that I don’t like mayo. You know what’s weird? I kind of like egg salad. Totally bizarre since mayo makes up the base of a traditional egg salad, right? When I was a kid, my mom made really good egg salad sandwiches on toasted wheat bread (the only kind of bread we were ALLOWED to eat). There was definitely mayo in her rendition, but the trick was to eat a sandwich fast enough so I didn’t have a chance to think about the mayo part. It totally worked.

I wanted to make egg salad last weekend but there’s no way I am going to buy a jar of mayo. Hell to the no! I don’t EVER EVER EVER want to see a grocery receipt of mine with the word mayonnaise on it. So here we have an mayo-free egg salad with the help of creamy ricotta and Greek yogurt. I added some chopped red peppers to add color & texture and it turned out pretty good! Next time I might add a little bit of chopped onion… a squeeze of lemon or a few minced jalapenos to the mix because it needs a little kick. Other than that, I’m pretty stoked to find a recipe for a mayo-free egg salad.

Make your hard boiled eggs first. Get them going!

Gather your ingredients for the salad.

Add them both to a bowl with the mustard, ricotta & yogurt.

Mix!! Taste for salt & pepper. Season accordingly.

The eggs are done…rinse them in cold water.

Peel them & chop them up!

Toss your chopped eggs whites & crumbled yolks in. MIX!!

Put some on a slice of toasted whole wheat bread. Top with arugula.

Fantastic Mayo-Free Egg Salad Sandwiches

Makes 4

(recipe adapted slightly from Power Foods, from the editors of Whole Living )

  • 8 large hard-boiled eggs
  • 3 tablespoons part-skim ricotta cheese
  • 3 tablespoons plain Greek yogurt
  • 2 teaspoons Dijon mustard
  • 2 teaspoons chives, finely chopped
  • 1/4 red bell pepper, finely chopped
  • coarse salt & pepper
  • 2 cups arugula
  • 8 thin slices whole grain bread

To hard boil eggs, place them in a saucepan; add enough water to cover them by 1 inch. Bring water to a simmer; remove from heat. Cover and let stand for 12 minutes. Drain and rinse eggs under cold water.

Whisk together ricotta, yogurt, mustard, chives, red pepper and 1/2 teaspoon salt into a bowl; season with pepper. Peel eggs; cut in half and remove yolks. Crumble yolks into a bowl and finely chip egg whites, add them to the yogurt mixture. Stir to combine.

Arrange eggs salad on top a slice of toasted wheat bread. Add the arugula and top with another slice of bread. This recipe makes enough for 4 sandwiches.

If you think the recipe needs a kick (like I suggested) chopped onions, a few pickled jalapenos finely minced or a squeeze of fresh lemon juice would do the trick! Maybe even a little bit of hot sauce?

      I don’t see the point. Why substitute ricotta cheese for mayo unless you just don’t like the taste of mayo? Mayo is soy bean oil based and not that unhealthy unless you are down on all fat. Ricotta is saturated fat unless you use skimmed which I think doesn’t taste that well.
      The other additions are a good idea and work well in any egg salad.

    I have a love-hate relationship with mayo, as I may have eluded to. In general, I’m not a fan, especially on sandwiches. (Though I must say, I have a sweet spot for fries with ketchup and mayo.) But back to sandwiches. I never understood mayo on sandwiches. It takes away from the rest of the flavors. Especially when it comes to egg salad. I looooove eggs. Why disguise a good egg under a mountain of mayo? So, I’m digging this version of egg salad. And I just so happen to have lots of eggs around at the moment and a hankering for sandwiches.     I love your typo “You can have egg salad with mayo”!
    This goes straight on my to make list, not because I hate mayo but because the commercial stuff with its additives gives me the creeps and the homemade stuff is too good to be used in salad.

    So, you also don’t like aioli I guess?

      oh dear. HAHA I didn’t see that! I had to fix it. Sometimes I like aioli…it depends on the flavoring. I just can’t think about it.

    What an awesome idea. I too have always hated mayo but upon giving birth to my second child I developed a love of egg salad, strange isn’t it? Anyway, I have always added just enough mayo to hold it together and added enough seasonings and other chopped vegetables to disguise the mayo itself. Can’t wait to try this with ricotta and yogurt. Thank you for the great idea.

    While I have no problem with mayo (in moderation, of course), I love egg salad and am always looking for tasty new ways to prepare it. Your version sounds great and I’ll give it a try. I’ll probably add my favorite ingredient as well, capers!

        If you like capers you would probably like egg and olive salad! I use the green salad olives with pimentos (so PA Dutch of me) but its REALLY good!!!

    I am totally curious about why you dislike mayo? Even if it is a gross reason, I’m game to hear it! I used to hate it when I was a kid b/c I thought it was gross for some reason, I think it was the appearance and consistency or something, cannot remember because I later learned to love it! Ha! so I’m just curious what you dislike about it? 🙂

      the consistency. the smell. the way it moves…the way it discolors to yellow and gets kinda see thru when it’s been sitting out. The fact that it’s just a blob of fat…when I see a macaroni salad DRENCHED in it my brain cannot get past the fact that it’s just a fat bomb. That eggy taste that I don’t like…even though I like eggs. The way it ooozes out of a sandwich….watching it hang off the corner of someone’s mouth…..Oh and when I had to put the lid back on the jar and put it away for my parents as a kid there was like goo on the sides of the top of the jar. UGGH. Really I could go on, but I’m kinda grossing myself out here.

    Interesting and I bet you could adapt this for deviled eggs! I was going to suggest lemon juice, but saw that you were thinking of that for next time! I always like dill relish and a little celery salt in egg and tuna salad. Dijon and chives sound good!

    I’ll have to try this! I hate mayo, too. What’s strange is, I also don’t like mustard. My family makes fun of me for my dry, dry sandwiches. Yet I LIKE potato salad, which has both. (though only if it is LIGHTLY tossed with the dressing. I can’t stand the grocery store-type potato salad that is dripping in mayo).

    Bacon, lettuce, tomato, sprouts, muenster and yes, EASY MAYO + DIJON on an everything bagel.

    I’ve never made egg salad with mayo! I use olive oil and, if I’m feeling energetic, cook some onions and mix the cooked onions and their liquid in as well. But I love your idea of adding ricotta cheese!

    I like this recipe, looks like fun, am probably gonna try it, but I guess I just have one point. Mayo, kinda have the ingredients in it is egg. I get the disliking the consistency or whatnot, but you guys should try to make your own mayo, basically egg yolk, oil, and lemon juice. Just thought this forum was interesting for loving the egg salad sandwhich, but hating the mayo with such force.

    I am TOTALLY with you on the mayo thing. *shudder* Despise the stuff and will not allow it in my house. I have been using greek yogurt for years to make tuna and chicken salad, make dips etc. SO much better!

    Eww…you don’t like mayo but you like ricotta? lol

    This might seem like a stupid question, but have you made mayo-based stuff with MIRACLE WHIP (or similar)? I don’t like real mayonnaise, either (at least not in the normal applications) – it’s just greasy and blechh. (The taste and the feel.) But I’ve always made egg salad, tuna salad, etc. with Miracle Whip (or the generic) and I like it. It feels less greasy to me and it tastes tangy instead of oily.

    Of course you might not like that, either! But I’d guess some people who haven’t tried Miracle Whip wouldn’t guess that it can be as different as (at least IMO) it is.

    Similarly to many people on this thread, I can’t do mayo. If I don’t know it’s on something, I’m fine. It’s not the flavor…I have an aversion to the THOUGHT of mayo, as silly as that sounds! Ever since childhood, mayo and whipped cream always just reminded me of fat and I never got past that visualization.

    That being said, I loved egg salad as a kid and missed it dearly. NOT ANYMORE!!! I added some homemade pickles, paprika, and chopped tomatoes and then topped my sandwich with a splash of balsamic and holy cow, my mouth is in heaven! This is such a fantastic recipe! Thank you a million times over!!!
