When I have company over I like to make some type of nut concoction. Nuts round out a cheese plate and they are usually appreciated by people who are vegan & gluten free (as long as you use the appropriate ingredients).
These orange spiced cashews evoke images of Darjeeling Limited.
It’s totally the combination orange zest, coriander & cumin with that sweet corn syrup.
You know what that means, right?! Tracy is going to do a weird visual thing again. Wait for it…
Why won’t Owen Wilson look at my nuts??
And we’re off.
This is sooooooooooo easy.
Even a caveman can do it. Ewww. Why did I type that?
Nuts in a bowl.
Spices & orange zest. I always spill spices. Gimme a break.
Nuts in a bigger bowl cuz I can space on spacial recognition sometimes. Corn syrup on nuts.
Spices all over nuts. STIR time.
Oh yeah! Cayenne. Go easy on it if you have company. If I was making it for me & Casey I would add 2 pinches.
Spread nuts on a parchment lined baking sheet.
Put those nuts in the oven.
NUTS are done!
The best part is that you get a few clusters in the mix.
That’s my favorite part.
Orange Spiced Cashews
makes 2 1/2 cups
Recipe from Martha Stewart Living
Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, mix cashews with corn syrup until evenly coated. Set aside.
In a small bowl, combine salt, zest, ginger, coriander, cumin, and cayenne. Sprinkle mixture over nuts, and stir until nuts are evenly coated. Transfer to one of the prepared baking sheets; spread in a single layer, separating nuts.
Bake until the nuts are golden and the syrup is bubbling, about 15 minutes. Immediately transfer nuts to the other baking sheet. Separate cashews; let cool.
