I know I normally post snacks on a Thursday but I have my dad’s favorite cookies coming up on Thursday and I really wanted to get this little snack idea out to you! I made my own cranberry sauce this year for Thanksgiving and had some leftover so I made a little bruschetta with it. Toast some crusty bread with olive oil (I did this in the oven) add some soft cheese (like a Brie!) on top (I used Cowgirl Creamery’s Mt. Tam cheese (not a brie!)- but a favorite!) and top it with a big dollop of cranberry sauce. It’s perfect pick me up for the afternoon in between lunch and dinner. Actually… it could be eaten for breakfast/lunch/dinner!

That cheese is soooooo good that words hardly do it justice. Regretting that I finished off my last piece last week.

One of my favorite snacks of all time – raspberry sauce is awesome, too. Oh, and my sister in law made a cranberry-strawberry jam that was AMAZING on brie + bread!
Just genius! Although I’m afraid what would start as a snack would become a fourth meal with as much as I would eat of these tasty bites.

Three of my favorite foods combined into one. I really like this idea especially for a quick and easy breakfast. Considering turkey, cranberry, and brie sandwiches are my fav this time of year, I am sure this will be great.
