Panettone. Oh man. I have such a weakness for the stuff. I usually don’t have it in my house because I will eat it all. Trust me on this. NO LOAF IS SAFE. The other day I was reading through the Eat: The Little Book of Fast Food by Nigel Slater (really good btw!) and I found this simple recipe/idea to be intriguing. You grill (or toast) some panettone (if you want to limit yourself, get one of the mini panettone loafs), smear mascarpone on the warm bread and then top with blackberries and a drizzle of honey. It’s wonderfully decadent yet kinda light and simple. Mascarpone has less fat in it than butter so LOAD IT UP, people. Also…panettone french toast. Get it.

Kind of reminds me of a favorite snack of mine as a kid – mix ricotta with a little vanilla, smear generously on raisin bread, maybe dust with a little cinnamon and toast it. Ricotta gets a little bubbly and it is delish.
I’ve still never had panettone, mostly because I’m afraid I’ll love it so much.
Now I should definitely go buy some.This sounds delightful…however, I have this urge to smother in butter and sprinkle with cinnamon and sugar.

PANETTONE. I feel like such an elderly lady for loving it as much as I do. My former roommate once made bread pudding with it, and I can’t see a box of panettone without thinking of that pudding now.
This could be dessert! 🙂 Blackberries pair are awesome with bread-y things. I make a creme brulee french toast and they are SO good on top!
Have you seen the tiny loaves at Trader Joe’s? It’s too much temptation.
Panettone French toast has become our Christmas tradition.I discovered Panettone last year and fell in love. The Trader Joe’s one is my favorite! Bitty loaves!! I have to try this out!

This is quite possibly one of the best things I’ve ever put in my mouth. I made one piece as suggested: incredible. And the 2nd fully assembled piece, I ran under the broiler for a minute to warm the berries, which was good, but the marscapone kinda melted away and disappeared. Now I’m curious how this combo would be as FRENCH TOAST!
