Split open a date, take the pit out, add some chunky peanut butter inside and top with shredded coconut. In this instance, I used sweetened coconut. Almond butter works just fine as well as sunflower seed butter. It’s chewy, sweet, crunchy and delicious. It’s also pretty healthy. This snack is definite keeper!
Peanut Butter Stuffed Dates
Mmm… this is making my mouth water. I’m thinking a slice of banana on the top would be great as I love peanut butter and banana together.
I eat these all the time and so do my kids. A definite favorite over here! 🙂
Ah – I serve these but in a different form – I whizz up the dates, PB and coco oil with a little desicated coconut and roll them into balls, then pop them in the fridge until ready to eat with coffee. Going to have to try this version of those flavours though (looks like less work and washing up too!!)

I love PB dates!! Will definitely try the addition of coconut. I like to make a whole batch and put them in the freezer – then they taste like chewy caramels!! great healthy option for when I’m craving something sweet.
Yummy! I spotted some maple peanut butter in our supermarket recently and I can only imagine that this would increase the deliciousness 🙂

I love marzipan stuffed dates, I bet using almond butter here would taste really similar but wish much less sugar. I have to try this!

Years ago, I was at a baby shower where the hostess served dates stuffed with goat cheese. I ate those instead of cake!
