I usually put jam or honey into my Greek yogurt but I saw this jar of leftover lemon curd in fridge the other day and thought HMMMM Let’s try it! It’s tart and sweet with the addition of the sliced banana. That little bit of shredded coconut it feels like a tropical banana cream pie! I’m really into it because it reminds me of the lemon custard yogurt my brother and I used to fight over when we were kids.

I had greek yogurt and lemon curd for breakfast today!
This is actually a problem I suffer from whenever I make it. Last time I marinated a chicken with it. I’d rather just eat it though. This looks delish!

Oooh…I’ve had lemon curd (love it!) with greek yogurt before, but not with coconut and banana…that’s a good combo! I added blueberries, which was really good but I’m going the tropical route next time!
This looks delicious, but can we talk for a second about the word curd? I hate it. Am I the only one? But seriously this lemon/banana situation looks fantastic 🙂
