This recipe for Almond Flour Chocolate Chip Cookies has sparked a lot of joy in my household. My friend MC always brings a gluten-free treat when she comes over and when I put in a request, it’s for some of these chocolate chip cookies. They always make the next few days in my house a bit sweeter. Breakfasts are delightful until I have to fight my husband for the last cookie in the house 🙂
Speaking of sweetness, I am now at the age where I comment on how awesome a dessert is because it isn’t too sweet. These cookies? They are just right for me. The cookie is chewy with crispy edges. Think: macaron meets a chocolate chip cookie. Oh, and the fact that they’re made in one bowl and require no butter (olive oil!!!) is a nice bonus too. I just need to make sure I have almond flour and chocolate chips in my pantry at all times.
I’m quite excited about all of my future baking possibilities now that I’ve tested the waters with almond flour.

Mix the olive oil, egg, and vanilla extract together. I made these with almond extract before and I highly recommend it if you ever feel like shaking things up.
Next, I am going to try to add some chopped almonds into the batter.
The dry meets wet.
Chocolate chips get folded in.
Form balls. Sprinkle with salt. Bake!
BAKED! I froze half of the batch so I could enjoy more later.
They’re my new favorite treat.

makes about 22 cookies
recipe adapted from Gathered Nutrition
- 1/2 cup olive oil
- 3/4 cup brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 2 +3/4 cup almond flour
- 1/2 teaspoon kosher salt, plus more for tops
- 1/2 teaspoon baking soda
- 3/4 cup semisweet chocolate chips
Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.
In a large bowl, whisk olive oil, egg, and brown sugar together until smooth. Stir in the dry ingredients until well combined. Fold in the chocolate chips. Scoop dough into 1 1/2 tablespoon-sized balls and roll with your hands to make them smooth. Place cookies at least two inches apart on baking sheet. Sprinkle tops with flaked salt (if desired) and bake for 11-12 minutes. Allow cookies to cool for at least 5 minutes before enjoying.
