Gluten-Free Lunch Ideas
Ok now that I showed you what I eat for breakfast in this gluten-free lifestyle, let’s take a look at my Gluten-Free Lunch Ideas.
To recap I eat:
- potatoes
- corn tortillas
- rice (not a lot, I’m not a big rice fan)
I don’t eat bread (you can read more about my weight loss journey here).
In the past year, I have opted for a lighter afternoon lunch. I have a later breakfast so lunch is around 1-2ish. Since we both work from home, I usually take whatever meal prep I’ve done and make lunch for Casey and I. I went through all of My Everyday Life photos to see what I’ve been eating for lunch the past year. This is how I have been staying satisfied:
Here are a few snack plates I like to make-
Persimmons + Almonds + Cheese + Apples
I love it when it’s persimmon season!
Tuna Salad + Tomatoes on GF crispbread
Adult lunchables!
Cheese+ Dried Fruits+ Grapes+ Olives
This was leftover from a photoshoot. YUM.
Ranch Dip+ veggies + almonds
Perfect snack lunch if you’re working at the computer.
GF Crispbread + cheddar + grapes + cucumber
Trader Joe’s makes a gluten-free crispbread that I really like. It’s super seedy!
Rice+ Salad situation
We had leftover rice so I heated it up with some meatballs and put it over spinach.
There’s feta and tomatoes in there too.
Sausage bean bake + spinach + parmesan
I’ve been making this bean bake without the breadcrumbs. I sometimes miss the breadcrumbs so I just add extra cheese.
Cheeseburger on Lettuce Bun
I usually order a burger with a lettuce bun when I’m going out to lunch. Sometimes I get double meat cuz you don’t get that same density in your bite when there’s no bun. I haven’t really been interested in trying a gluten-free bun but who knows that might change. I order fries because I eat potatoes, love fries and they fill me up.
Herbed Potato Salad + Arugula + Avocado
I usually add a bunch of red wine vinegar and mix it all up.
Sausage White Bean Soup
A meal prep staple! I used to have this with bread but now I just add extra Parmesan.
Mushroom Tamale (with egg)
I’ll reheat a tamale and add enchilada sauce to the top of it. Here’s one with a cheesy egg.
Chicken + Quinoa + Avocado + Arugula Salad
The chicken and quinoa were meal prepped. I used the container the arugula came in to make a bowl!
Taco Meat + Rice + Salsa + Cheese + Avocado + Hot Sauce
This is why I make taco meat in my meal prep.
Mexican Pizza
I make these with corn tortillas.
Papusas
I have these for breakfast lunch and dinner.
Red Curry Shrimp + Rice
I love the leftovers on this. The sauce gets even better.
Rice+ Tikka Masala Sauce +Baked Tofu + Cucumber Avocado Salad
Trader Joe’s has a tikka masala sauce that I mix with rice for a quick meal. Sometimes I do chicken. Here it is with tofu.
Chicken Cilantro Meatballs
(I use tamari to make it gluten-free)
Autumn Reset Button Salad
This one has wild rice in it. I could eat roasted delicata squash all day every day and never get sick of it!
Tuna Salad + Arugula + Avocado
I eat this a lot cuz tuna salad is almost always in my meal prep!
Cucumber Slices + Boursin + Lox
So fancy and delish.
GF Crispbread + Cream Cheese + Cucumber + Red Onions
Meaty Pasta Sauce+ Arugula+ Ricotta+ Parmesan
I have this for dinner when the boys are having pasta!
Yellow Curry Noodle Soup
I’ll have to share the recipe for this one soon. I use rice noodles and whatever veggies I have left in the fridge.
Buddha Bowls/Whole Grain Bowls
