I am unsure if I should call these Banana Oat Cookies, Banana Oat Muffins, or Banana Oat Drops. Maybe you can help? Ok, so you know my hippy banana bread that many of you love so much? They’re like nuggets of that bread. Banana Oat Nuggets? How does the internet feel about the word nugget? They’re like a hunk of banana bread meets a cookie.
They’re full of fun stuff like…dates, bananas, oats, walnuts, coconut & chia seeds.
They’re vegan and gluten-free. OH, and NO ADDED SUGAR.
Don’t let that fool you! They taste delicious.
They’re so healthy and not too sweet. I like them warmed up with some peanut butter. They’re delightful. Thanks for introducing them into my life, Judy! Much LOVE!
Here’s what’s involved:
Mash bananas. Mix with coconut oil.
All the sweetness comes from dates.
Mix it alllllll together.
Form into balls.
Top each cookie with a walnut. Play around with the recipe. Add different nuts! When I first had them, they were all pecans instead of walnuts you see here.
Off they go into the oven.
I love a good roasted walnut.
I love A HOARD of cookies even more.
This has been my breakfast for the past week or so.
Definitely worth making if you’re ready to clear out your pantry and give purpose to rogue nuts and seeds.
There’s room for experimentation and tinkering. My favorite two things!
makes 18 cookies
- 3 bananas. mashed
- 1/3 cup coconut oil, melted
- 1 cup chopped dates
- 1/3 cup shredded coconut
- 1/3 cup sunflower seeds
- 1 cup chopped walnuts + 18 walnuts for topping
- 1 3/4 cup rolled oats
- 2 tablespoons chia seeds
Preheat oven to 350F.
Line a baking sheet with parchment paper, set aside.
In a large bowl combine mashed bananas and slowly stir in the dates, coconut, sunflower seeds, walnuts, and oats followed by the chia seeds. Stir until well combine. Using a small ice cream scooper, shape cookies and place on parchment paper lined baking sheet. Top each cookie with a walnut piece. Bake for 20 minutes. Let cool before serving.
