If you have limes and sugar, you can easily make Lime Sorbet. Did you know that?
It’s a good thing to know if you are stuck at home with a sick child who has a sore throat and you want to give them relief and a treat.
It’s quite a palette cleanser, let me tell you! I bet it would be really good in a frozen beverage too.
It’s begging for a little ginger beer poured on top.
All you need:
Not pictured here is vodka! It’s totally optional. It just makes the texture a little less icy!
Dissolve sugar in boiling water to make a simple syrup base.
Keep stirring until it turns clear. Magic! Set aside and let it cool to room temp.
Juice your limes.
Zest a lime.
Give it a little blend with an immersion blender. This will make the zest smaller!
Pour into your ice cream maker.
Follow the directions!
Freeze! Now you are ready to serve.

makes 1 1/2 pints
recipe slightly adapted from Cooks Illustrated
- 1 1/4 cup sugar
- 1 1/2 cup boiling water
- 1/2 cup fresh lime juice (from about 4-5 limes)
- 2 teaspoons lime zest
- 1 tablespoon vodka (optional)
Dissolve sugar in boiling water and let cool to room temperature. Stir in fresh lime juice, lime zest and vodka (if using). Give mixture a little blend with an immersion blender and transfer to your ice cream maker. Follow instructions and chill sorbet in the freezer for at least 2 hours before serving.
