 I’ve been desperate for a way to get my family to eat greens, so this recipe from my friend Jessica’s latest cookbook,  Everyday Dinners could not have come at a better time!

Broccoli Fritters with Chipotle Yogurt

Broccoli is bound together with cheese, eggs, and flour and served with a chipotle yogurt dip. I’ll definitely be adding this to my meal preps because they’re so delicious for breakfast/lunch.

Happy Monday, folks! 

This weekend the boys were away for some baseball and I got a day at home to myself. LUXURY! I did a bunch of organizing and cleaning that I’ve been neglecting and it felt amazing. I went for a long walk in the city on Mother’s Day and Casey made us pizza for dinner. I didn’t get to my meal prep cuz I TOOK THE DAY OFF AND RELAXED.  Let’s write down our Intentions for the Week, shall we?!

During the first few months after her death, I found myself panicked and worried that I was going to lose the essence of who my Mom was. I have a small collection of voicemails, Snapchat videos (with fun filters!), and photos of her on my phone. I became obsessive about finding everything I had with her in it.  I also started a NOTES folder on my phone of Things My Mom Used to Say. Whenever something would come up, I’d jot it down hoping to hand-letter them someday (when I felt my handwriting was good enough!).

April was kind of eventful. I got vaccinated (yay!), we went to Santa Barbara, baseball games galore, my Dad told us he’s getting married, and I was able to see more friends! There was a lot to process and grief crept back up again. Whew!
