Sausage and White Bean Bake

Sausage White Bean Bake

I’m on the lookout for recipes that are hearty, easy to make, and will provide leftovers that we can easily heat up for a few meals after. Mostly because I have lost my steam in the kitchen and don’t really want to keep cleaning it since we’ve been at home for what feels like 500 days now. I made a recipe like this Sausage White Bean Bake back in 2008 and I don’t know why it took me this long to work something like this back into the rotation cuz it’s exactly what I need right now on cold winter nights,

So, welcome back into the rotation hearty BEAN recipe!  I made this even easier for myself and subbed in red wine vinegar for white wine cuz I didn’t have any to open. 

The leftovers are fantastic, I’m happy to say. On day two, I heated some up in a bowl with marinara sauce and OMG divine.

Happy Monday, friends!

We had some really warm weather here in the Bay Area this weekend. We spent time getting stuff done around the house. We had railings painted on our stairs outside and Casey installed them. It’s exciting to see transformations around the house.  Lots of work in the yard. We made a bunch of pizza and we watched a lot of Friday Night Lights. Herbed Potato Salad

Herbed Potato Salad

When I’m in the meal prep rhythm, this Herbed Potato Salad is something I make for weekday lunches at home. I like to think of it as insurance that I will eat a fair amount of salad during the week.

It’s January and I AM READY TO GET BACK INTO MEAL PREPPING! Mark my words!

I’ve played around with this recipe over the years and landed on a combination of flavors I like.  It reminds me a lot of my Grandma’s potato salad except she added a ton of mint in hers. It’s January and I don’t have fresh mint from my yard so parsley and green onions will do just fine in the green department.

It usually ends up in a bed of arugula with a bit of feta or goat cheese crumbled on top. Sometimes I finish it off with a splash of red wine vinegar and oil and that’s it. A very healthy lunch that can come together in a snap. The best part is that the salad gets better after a day or two, so save some leftovers!

Intentions for the Week List- Week 2 of 2021

Happy Monday, friends!

Ready to face a new week? We stayed at home all weekend again. Watched Friday Night Lights (again!) finished Bloodline (whew!) and spent time cleaning up some spaces in our house. Cooper too!  I put together a new rolling cart for my office and set it up with all of my merch. I’m hoping to get back in a good meal prep rhythm. It’s mostly so I can eat more vegetables.  Let’s take a moment and write down our Intentions for the Week, shall we?
