Crustless Pumpkin Pie

When we were growing up, my Mom always made an additional pumpkin pie during our Thanksgiving holiday to bring to St. Vincent de Paul’s soup kitchen. She somehow always ended up with too much filling and would portion out some of it into ramekins and bake them alongside of the pumpkin pies for us kids. We were so desperate to break into the pies the night before Thanksgiving that she appeased us with these little cups of Crustless Pumpkin Pie. I remember eating them in our dark kitchen the night before Thanksgiving with nothing but the glow of the oven to light the way. 

I haven’t made pumpkin pie since my mom died. I’ve actually had a hard time eating it. When my Dad found my Mom dying in the kitchen a day before Thanksgiving, she was in the process of making pumpkin pies for the family & the soup kitchen. Her pies were never finished. She made the filling and that was it. She died while doing something out of pure love for her family so it’s hard to not feel emotional about it. 

The holidays are unfortunately a time when food and grief are intertwined.  As a way to help process grief,  I thought it might be nice to recreate that crustless pumpkin pie my Mom used to make for us. 

I made a dairy/egg free on a whim and OH MY GOD it is hard to taste the difference. Pure alchemy!  I almost ate half of it on my own. I am happy that I found a recipe that would please my anti-carb Dad and my oldest brother who is vegan. My Mom was always so accomodating of anyone’s dietary needs and I’m happy to be that person in our family now.  If someone was gluten-free in the family, they would be covered too!  Pumpkin pie without all of the crust fuss. Everyone wins.

Intentions for the Week- Week 44 of 2020

It’s MONDAY! We made it to another week. This weekend was restorative! I got a bunch of stuff done around the house including:

  • organizing Cooper’s closet
  • cleaning out our utensil drawer & kitchen tool drawer
  • did gardening
  • decorated the mantle for Halloween (I need to take photos!)
  • got to ground zero with laundry (YAY)
  • cleaned out the freezer

Added one of my Mom’s paintings (she bought) in my kitchen makes me happy. I’m also using the ceramic bowl she made in 1977 (it’s dated!) for my garlic.

Curry Zucchini Soup (dairy-free!)

In 2007, I posted the recipe for my Mom’s Curry Zucchini Soup.  My blog wasn’t even a year old yet. The soup was something my Mom made every year to start our Christmas Eve dinner. It’s a soup that I’ve been making since I called her up for the recipe one night in college. If you do the math, it’s been about 2 decades of making THIS SOUP that I never grow tired of.

Fast forward many years later and LOOK, MOM, YOUR SOUP IS IN A MAGAZINE.

Better Homes & Gardens is running a special Meal Prep issue right now and your girl has her own spread in it!

You can order a copy here if you can’t find it at your local newsstand.

My Mom would have probably shown my meal prep spread to all of the clerks and baggers while buying the issue in the grocery store. It was no secret how proud of me she was. She dropped my business cards wherever/whenever she could.

So, here we are. It’s 2020. Colder weather is upon us and I want soup. My oldest brother is vegan and I’m starting to cut down my dairy consumption waaaaaaaay down,  so I adapted her curry zucchini soup recipe to accommodate us! 

With the help of cashew cream, you wouldn’t really have any idea that it’s not heavy cream in the soup. 

I don’t have to take a lactose pill to eat this soup anymore. YAY.

Life is all about adapting & adjusting to help keep the magic alive. Hooray for old + new recipes.

I love that my Mom’s recipes live on in other people’s kitchens. Her hard work making traditions in the kitchen has sure paid off!

Intentions for the Week – Week 43 of 2020

Happy Monday, friends!

This weekend was a busy one. My brother-in-law came over to help us with our sprinkler system. I am excited to have some of my morning watering be automated. I’ve been doing a lot of it by hand for the past year and I CANNOT wait to see how things unfold. Cooper and I watched a lot of the new Home Edit show on Netflix and it gave me a boost of energy to organize.  I tackled a major paper pile this weekend and I’ve been slowly cleaning out drawers around the house and I reorganized our homework station.   I hope to continue the momentum this week. Here are my Intentions for the Week!
