Intentions for the Week

Looking to get your head in the game? Tracy from Shutterbean makes a weekly TO DO LIST called her Intentions for the Week. Here's what this week looks like:

Intentions for the Week – Week 31 of 2020

Happy Monday, friends!

I just asked my Alexa how many days it’s been since March 11th (the day we started SIP) and it’s been 138 days! WHOAAAAAA.  I can’t even believe that. This weekend was pretty nice. We had my Dad over with his boo to celebrate his 74th birthday. I hit a bit of a grief trigger because it’s always hard celebrating big things in our family without my Mom. I made her Lemon Chicken last night so it would make me feel closer to her. It worked! Also… Cooper was into it way more this time I made it than EVER and that made me happy.  VICTORY!  Other than that, I finally cleaned off my work desk and straightened up the kitchen!  I did a little meal prep too but I didn’t take pictures. DID IT EVEN HAPPEN??!!

Let’s figure out what our plans are and write down our Intentions for the Week, shall we?

Intentions for the Week – Week 30 of 2020

Happy Monday, friends!

Are we staying healthy? Are we wearing our masks? Are we taking good care of ourselves? This weekend we had friends from our pod over for dinner outside on our deck. It was wonderful. I made a Greek feast. We also spent some time with our neighbors and shared cocktails from a distance. I feel so thankful to have interactions and connections. It totally distracted me from indulging the thoughts of how Cooper won’t have school AT school for a while..maybe even til next year. What is this life?

Let’s avoid some existential dread and figure out Intentions for the Week. Here they are!

Started working on my July spread for my Currently Workbook this month.

Salt & Pepper Shrimp

Salt & Pepper Shrimp is something I love to order when we are out at a restaurant, but I never order it for delivery because it definitely doesn’t travel well. The same goes for fried calamari.   In the delivery process,  what was intended to be crispy and crunchy turns into a soggy mess the longer it sits in a sweaty TO GO box.  Plus, it’s never HOT, and that bugs me.

But now I don’t have to order takeout cuz I made one of my favorite dishes at home and my family loved it!

And that in itself is a reason to celebrate. There’s a new dish to add to my picky eater household and I AM THRILLED because I am getting so tired of cooking the same ole things during the quarantine. A big plus is that most of the ingredients are things I usually have on hand!
