Currently Workbook 2020

As you know, for the past year, I’ve been working in my self-reflection workbook- Currently 2019 

It’s been an incredible way for me to:

  • practice my handwriting
  • take time to reflect
  • write down all the good things that happen
  • leave a trail of magic behind for my son, Cooper

Intentions for the Week – Week 47 

Happy Monday, friends!

Back in the mix!  This weekend I flew home from North Carolina, cleaned up my kitchen, did stuff around the house and went to the Renegade Craft Fair with my friend Neiley. I am happy to be back home with my family and cats.  We are still going through our deck project that will hopefully be done soon. 

Thanksgiving is just around the corner and I’m starting to wrap my brain around it.  I am also trying to tell myself to BREATHE.  My Mom died on week 47 of 2017 so it’s kind of a weird time for me. I am fighting the sad thoughts with gratitude.  I am grateful for my family who is still with me. I am grateful that I had my Mom for 38 years.  I just can’t believe it will be two years since she died. 

This was the last video my Mom saw on my Instagram before she died. I’m glad she was able to see it.

OK! Time to figure out my Intentions for the Week.

I love the crunch of the leaves. Gonna be a little sad when there’s none left on all the trees though.

Autumn Reset Button Salad

Put me in front of a salad bar (a really good one) and give me the theme like…Autumn Reset Button Salad and this is what I would come up with.

Autumn is the season where I fall in love with delicata squash again. It becomes a staple of my #shutterbeanmealprep during this time of year. I’ve also been going through a wild rice phase so that will have to work its way into this seasonal salad. Crispy apples are delicious this time of year. Pepitas and walnuts add crunch to the salad, dried cranberries add a little tang and chewiness, feta adds a nice bite and it’s all rounded out with a honey mustard vinaigrette. All the textures and tastes, come together on a bed of peppery arugula and now I remember what health food tastes like. Ahhh yes. Eating this as much as I can this season before I start all of my Homemade Holiday Gift Making!

Intentions for the Week – Week 46 of 2019  (here’s Week 46 of 2018)

Happy Monday, friends!

We had a busy weekend at my house. My father-in-law and brother-in-law were here helping with projects around the house (making planter beds for our backyard!) and we are going through a deck restaining project too. I spent most of yesterday going through my paper piles and cleaning up the house. I AM GETTING RID OF SO MUCH STUFF AND IT FEELS AMAZING.  I hope to keep the momentum through the week.  I’m traveling to speak at a food writer’s symposium so I have to get as much of my TO DO LIST done before I leave. Time to write down my Intentions for the Week to get my head in the game.

This week I am going to set the Intention to track what I eat in my food journal. 7 days straight. Can I do it? I think so!  Honestly, the biggest problem I face with it is not having it when I need it. So, this week I am making sure it’s WITH ME whenever I eat.
