Mocha Energy Bites

I’m not much of a sweets person, but every now and then I get a craving for something chocolatey around 3PM.  There’s a little area in my freezer where I stash rogue cake slices, baggies of cookie chunks and other fun afternoon like treats like these Mocha Energy Bites.

It pays to have squirrel-like tendencies.

I like eating these Mocha Energy Bites with hot tea in the afternoon.  One bite is usually all I need. Sometimes I go in for two.  They’re chewy with bits of chocolate and nuts throughout.  The ground espresso gives it a good depth too!

Intentions for the Week:

Happy Monday, friends!

We are on Week 9 of 2019.  It’s flying by pretty quick huh? How are we all doing after all the Marie-Kondo action in January? Still keeping up our spaces?

We must never forget:

LIFE REQUIRES MAINTENANCE

Your closets won’t clean themselves.

Over the weekend, I set a 15-minute timer and turned my cooking drawer around.  It’s amazing how many things can be put back in the wrong place.  I didn’t stay on top of it and it became hard to close the drawer! Remember, STARTING is usually the hardest part. Set a timer for 20 minutes, and usually, after the first 5, you’re on a roll. Can you carve out some time to tackle a project that’s been bugging you?

This week is supposed to rain the whole time.  I’m planning on doing #shutterbeanmealprep this week. My fridge has quite a few things I can repurpose into new things. Lemon ginger elixir, instant pot applesauce, sausage soup, and Thai Basil Beef, are definitely on the TO MAKE list for the week. Cooper said he wants Fresh Spring Rolls so I’ll have to pick up ingredients for that this week. I also have to make kombucha. I’m getting behind.

The only thing that keeps me accountable to my actions is showing up here every week and spelling out my Intentions for the Week. Here’s what I’m hoping to accomplish.

Intentions for the Week:

  • laundry
  • sort through emails
  • clean out fridge/meal prep
  • grocery shop
  • write down what I eat in food journal everyday- 2 months of tracking so far
  • work through my  Currently workbook and post February
  • keep on top of my life with my bullet journal
  • drink 8 glasses of water every day
  • get enough sleep
  • work on new recipes
  • work on an Etsy shop update
  • ship out the last of the food journals
  • order more food journals! I sold out! So far 1000 of you have them!
  • keep tracking steps with my Fitbit One
  • pull cards and work in sketchbook
  • play around with new camera
  • continue working on tax prep
  • work on writing up course for Santa Fe
  • research a convertible backpack
  • research plane tickets
  • catch up on social media
  • carve out time for leisure reading
  • go to the Farmer’s market. It’s been a while! Maybe get knives sharpened?
  • trip to Salvation Army to donate
  • work in the garden
  • think about what spring cleaning I’d like to get done around the house

Last Week’s Intentions:

  • meal prep/clean out freezer
  • laundry
  • edit photos
  • meditate!  (did twice, need to do more)
  • catch up on social media
  • prep for a conference call
  • write down what I eat in food journal
  • keep on top of my life with my bullet journal

  • manicure (my hands are looking rough!)

  • make a new recipe (been playing around with polenta!)
  • post a new recipe (posted what’s in my bag!)
  • work in my Currently workbook as February starts to unwind.

  • go to bed at a reasonable hour
  • eat less bread
  • get outside while the rain has stopped!

What’s in My Bag?

 

What's In My Bag? Tracy Benjamin of Shutterbean.com shares what's in her bag and how she stays organized!

I’ve been through two bags since my last What’s in My Bag post and I didn’t even show you!   I used my Mom’s leather shoulder bag for a good while and then got paranoid that the smell of her would fade away if I continued to use it so I switched bags immediately. Her bag is hanging in my family room on the door and I think of her whenever I see it.  I am glad I asked my Mom if I could use it a few years ago. She got to see me use her bag, just as I got to see her use one of my bags from college in the last few years of her life.  Life a real trip, isn’t it??!

For the past six months, I’ve been really enjoying my TRIANGLE BOOKHOU BAG. I’ve had it for a few years and it’s aged well. It’s been the best companion for erranding as it can fit a lot!  Just you wait and see what I stuff in mine!  Over the years, I’ve learned that I am a crossbody bag wearer. I like to be able to have hands-free mobility. I haven’t tried a fanny pack, but I can really see how convenient they are.  So this is my favorite crossbody bag as of late.

Cleaning out my purse is one of my action items on Sundays when I’m getting ready for the week ahead. I actually really love this process because it forces me to be intentional about I carry along with me.  I ‘m glad I’ve done these posts because I love being able to reference old versions of myself. It differs a bit, year by year. Things come and go, and there are some of my favorite things.

My Essentials

Let’s talk about what I keep with me. If you’re new to here, I like to be prepared. I learned it from my Mom, who also carried a lot of stuff with her too.

  • ⋅Bullet Journal- My calendar/TO DO LIST toolkit.  If I’m on the go and will need my calendar, I’ll bring this with me. If you want to see some of my bullet journals, you can do that here! 
  • ⋅Food Journal -I usually have this on my kitchen counter when I’m at home and when I’m away from the house it comes with me. I designed the food journal with the idea in mind that it was something I couldn’t easily slip into my bag to be on the GO with.  If you would like a food journal, you can get one from my Etsy shop.   • ⋅Notepad- I folded up a stack of paper /stapled it with a long stapler to turn it into a booklet.  Kinda like how I did with our gratitude journals. When we’re out and about and I need to jot down notes or occupy Cooper at a restaurant, I pull out this notebook. I love when we finish one because it’s mostly filled with hangman, random grocery lists, and countless games of tic-tac-toe.
  • Wallet– I have this shiny rose gold Kate Spade wallet I love!
  • Reusable shopping bagsBaggu makes the best!!! I have a variety of them and they carry SO MUCH at once. All the clerks are always commenting on how much they love my bag and it makes me happy because it sparks a good conversation!
  • Keys- because, DUH
  • Business cards- I got mine from Moo (get 25% off your first order here)
  • Beauty Bag – for touchups and help!
  • Pen Case – cannot go anyware without it.
  • Receipt Folder- to keep paper piles at bay.
  • Mint Case- fresh breath!

HAPPY MONDAY!!!!

Cooper has the next few days off of school so our week is gonna be a little wonky! I’m hoping to get a bunch of work done at night so we can play! This weekend was filled with some baseball games (already!) and an adventure up to Sebastapool with my friend Emma.  My house is kind of a mess. I have a bunch of ingredients in the fridge to do something with so I know that a little #shutterbeanmealprep is in my future too.  This was the first weekend in a while that I didn’t meal prep and things feel weird! That must mean I got myself in a good routine/rhythm. Time to get back on track!
