Boy am I glad February is over!  It was kind of a rough month here.  At the beginning of the month, I was waiting to hear back results from a breast biopsy + MRI (BENIGN!) and I tried really hard to not let worry consume me. The last time I had to get an MRI, my Mom was with me and so this whole month was such a weird experience. This second Valentine’s Day without my Mom (who always made the day pretty special for us) was a bit bittersweet. Grief hit hard and the cold weather and being stuck inside while it’s raining didn’t help. Season Affective Disorder in full swing here!

March is here and I am looking forward to spring. My garden starts popping and I can’t wait to see it transform after all the effort I put in this winter.  I’m also excited to do some spring cleaning and start thinking about life outdoors soon.

Happy Monday, friends!

We are the 10th week of 2019. It’s the first full week of March too. Wahoo!  The light is changing in the mornings out here in California. Are you feeling it where you are too?  Friendly reminder that we’re going to lose an hour with daylight savings this weekend. Spring is on its way around here!   I’m looking forward to March although Mercury will be in retrograde for most of it so it should be a wildly (annoying) time!  I mean it is, if you believe in that sort of thing. Which I do….

Over the weekend we had basketball and we did a bunch of work. We got to see my Dad and I was able to do some meal prep for the week!

I cleaned out the fridge like I always do on Sundays and this is what I came up with:

I hadn’t meal prepped in two weeks and it was really throwing everything off. I’m glad we’re entering the week with some good food options. This should get us through a few meals.

  • package up food journal batch. THANK YOU for your orders this weekend! WOW!

  • call doc
  • clean out car
  • paint nails
  • do a facemask
  • eat more salads/greens in general
  • drink water- this bottle is helping me!
  • track what I eat in food journal
  • wear my FitBit and track steps
  • keep organized with my bullet journal

Mocha Energy Bites

I’m not much of a sweets person, but every now and then I get a craving for something chocolatey around 3PM.  There’s a little area in my freezer where I stash rogue cake slices, baggies of cookie chunks and other fun afternoon like treats like these Mocha Energy Bites.

It pays to have squirrel-like tendencies.

I like eating these Mocha Energy Bites with hot tea in the afternoon.  One bite is usually all I need. Sometimes I go in for two.  They’re chewy with bits of chocolate and nuts throughout.  The ground espresso gives it a good depth too!

Happy Monday, friends!

We are on Week 9 of 2019.  It’s flying by pretty quick huh? How are we all doing after all the Marie-Kondo action in January? Still keeping up our spaces?

We must never forget:

LIFE REQUIRES MAINTENANCE

Your closets won’t clean themselves.

Over the weekend, I set a 15-minute timer and turned my cooking drawer around.  It’s amazing how many things can be put back in the wrong place.  I didn’t stay on top of it and it became hard to close the drawer! Remember, STARTING is usually the hardest part. Set a timer for 20 minutes, and usually, after the first 5, you’re on a roll. Can you carve out some time to tackle a project that’s been bugging you?

This week is supposed to rain the whole time.  I’m planning on doing #shutterbeanmealprep this week. My fridge has quite a few things I can repurpose into new things. Lemon ginger elixir, instant pot applesauce, sausage soup, and Thai Basil Beef, are definitely on the TO MAKE list for the week. Cooper said he wants Fresh Spring Rolls so I’ll have to pick up ingredients for that this week. I also have to make kombucha. I’m getting behind.

The only thing that keeps me accountable to my actions is showing up here every week and spelling out my Intentions for the Week. Here’s what I’m hoping to accomplish.

Intentions for the Week:

  • laundry
  • sort through emails
  • clean out fridge/meal prep
  • grocery shop
  • write down what I eat in food journal everyday- 2 months of tracking so far
  • work through my  Currently workbook and post February
  • keep on top of my life with my bullet journal
  • drink 8 glasses of water every day
  • get enough sleep
  • work on new recipes

  • ship out the last of the food journals
