Currently: June 2018

I really enjoy looking at these posts every now and then and seeing how much my life has changed/stayed the same in the past two years. Here’s what was going on in June 2017 & June 2016, if you want to take a look. Also, there’s some part of me that’s happy I started this column because I know my Mom had a good time reading through them. It’s kind of like opening up my diary.

My Everyday Life: Week 24 on Shutterbean.com

June was all about baseball (mostly). Cooper was in the playoffs. We had practice all the time and then he was in All-Stars as well. For a few weeks, it meant that our dinners were rushed or on the go. It also meant that Cooper and Casey weren’t home for dinner so I had quite a few solo dinners. Not spending that time doing cooking was good and bad. I felt a little out of my routine and now that baseball is over, I’m glad to have family dinners that don’t require rushing off to bed afterward.

Right now, we’re settling into a Summer schedule, balancing a few camps and working from home.

Intentions for the Week

Looking to get your head in the game? Tracy from Shutterbean makes a weekly TO DO LIST called her Intentions for the Week. Here's what this week looks like:

Happy Monday!  It’s Sunday night. I’m sitting in bed using Casey’s laptop because mine is broken (SIGH) and I’m trying not to get stressed out about how much this next week without a working computer is going to blow. I really don’t like being a slave to technology, do you?  The good news is that I got enough Vitamin D to last me a few days. We were up in Calistoga this weekend visiting family. I wore a bathing suit. I got myself in water. We had a nice dinner outdoors and I got sun on my shoulders and painted outside. It was all awesome except for the computer situation. Some things are beyond my control!!

This week has a holiday smack dab in the middle. How rude! We’ll see how much I can get done despite that. I hope you enjoy the holiday if you celebrate it. I’m thinking of making an icebox cake situation or maybe I’ll go the chocolate chunk blondie route with ice cream?  This will be my first 4th of July without my Mom in a very long time.  I am going to try to give myself grace and cry if I need to.  I know it’s gonna be a little tough for me and my Dad.  Knowing that makes it somewhat easier.  Either way, here are my Intentions for the Week!

 

Intentions for the Week:

  • laundry
  • unpack from the weekend
  • this includes the car!
  • Continue work on #100daysartbeforebreakfast
  • make ice cream cake
  • edit photos
  • post June wrap up
  • write postcards/send
  • take good care of my skin
  • try to go to bed at a reasonable hour
  • catch up on social media
  • catch up on bookkeeping
  • make art with Cooper
  • finalize 4th of July menu/ make a dessert
  • work on front yard- plant more plants
  • drink enough water
  • continue sorting out Cooper’s old clothes
  • work on at least one shelf in pantry
  • track what I eat in my food journal
  • limit carbs
  • find time to meditate or leisure read or both
  • get as many steps a day as I can with my fitbit.
  • make kombucha
  • Take pictures of items for poshmark 
  • figure out broken laptop situation (UGGH)

  • Bookkeeping
  • Keep house clean/organize
  • Make a pizza on the bbq
  • Make a batch of mint iced tea
  • Make an ice cream cake for work
  • Clear floor in prop closet

  • Do some meal prep (when we’re at home there’s not much of a need to)

  • Start packing up old clothes Cooper doesn’t fit into (started)

  • Take pictures of items for poshmark 
  • order cards
  • start scanning artwork (working on it)
  • Plant stuff in front yard (started)
  • Deal with paper piles on desk
  • Go on family hike

  • Give myself permission to go slow (struggled)

Lemon Dill Salmon Capellini

Lemon Dill Capellini with Salmon is a great light Summer dish. A great use for salmon leftovers. Find the recipe on Shutterbean.com

The weekend is coming up and I wanted to add this Lemon Dill Salmon Capellini to your radar. Quite a few of you were looking for a good summer recipe that doesn’t involve a grill and I think you might like this one!

You also have to be into vodka, cream and salmon. Can you dig?

The vodka cream sauce here is flavored with a good dose of dill and lemon juice.  It feels incredibly light and with the combination of the texture of capellini, you’re probably not going to want to stop eating said Lemon Dill Capellini with Salmon. It’s a texture thing. I cannot resist capellini. I feel like it’s so light it doesn’t have calories. I know I’m wrong.

Now, we just need to you to have some leftover salmon to use and we’re one step closer to dinner!

Intentions for the Week

Happy Monday!

Let’s get into this week. We had a nice weekend. We went to a party Friday night. My boys were away for baseball on Saturday so I watched Won’t You Be My Neighbor with my neighbor! Had a few teary moments. I highly recommend. It was so good!! It’s the best way to beat the heat if you have a hot night. That’s what we did!  I have a lot to catch up on the house this week. Having a kid at home for the summer creates quite a house tornado. It will all get cleaned up (eventually).
