It’s not that I don’t like beef stock, it’s just that you have to intentionally buy beef stock. I’m normally a chicken stock/vegetable stock only kind of gal. Beef stock is never really on my grocery list which means I never can make French Onion soup on a whim.

So now if the craving for French Onion Soup comes on, I can build the flavor profile with chicken stock and white wine.

Intentions for the Week

Looking to get your head in the game? Tracy from Shutterbean makes a weekly TO DO LIST called her Intentions for the Week. Here's what this week looks like:

Hello, Monday.

We’re at it again.

This weekend I did quite a few organizing projects. I evaluated my workspace. We went into the city. I bought some plants. We celebrated our 12th anniversary with sushi. Hopefully, we gained some energy for this coming week because it’s going to be a busy one.

I also spent some time looking through old journals and finding little notes I left myself.
Since my Mom died, I haven’t felt like keeping a journal. I’ve fallen off track with bullet journaling. My biggest intention this week is to stay on top of my calendar and lists. Anytime I deviate from this, my life gets messy and I can’t keep up.

I can’t just wing it. I need to engage.

  • continue to work on tax prep
  • return to homegoods
  • return coveralls
  • repot ficus
  • ship out orders for The Handwriting Club
  • book flights
  • hike with Casey
  • make good food choices
  • take an exercise class
  • invite a friend out for coffee
  • make someone happy
  • send a few letters
  • drink more water (this helps)
  • help a friend in need

I remember watching some kid devour shrimp cocktail at a restaurant a few years ago and someone commented, “KIDS GO CRAZY FOR SHRIMP!”

um.

Not mine. 

But then something happened a few weeks ago. My son tried some buffalo wing style shrimp (oof) and loved it. Now he wants shrimp when we’re out to eat and hogs all the shrimp tempura. Be careful what you wish for 😉

But we’re into shrimp right now. I am not getting overly excited but

If you think I’m overreacting, I just sat here and thought about it.

It’s been 9 years since I’ve been able to make a shrimp dish for my whole family.

I suppose this is when I chime in with a Better late than never.

My Mom used to make this dish. Of course, she did, it was one of the simplest recipes from her beloved Ina Garten!  I love that food can sometimes feel like a hug from your Mom. I sure needed it the past few weeks.

Oh, and did I mention this sauce on this dish? It’s lemon buttery garlicky goodness. You’re going to want to sop up every last bit with bread. Promise. CONTINUE READING

Happy Monday!

I had a pretty busy weekend doing stuff around the house, packing up gifts for the Rincon Valley Little League  & meal prepping. I don’t think I even left the house this weekend. I didn’t even realize that until now! My brain might have been kickstarted in Spring cleaning mode and I’m totally OK with that. Over the weekend I cleaned up my makeup drawer and I feel like I got a whole new lease on life (semi-dramatic). I also cleaned out the inside of the car because it was looking like a garbage can.

Oh, and I did some meal prep. I’d say we’re getting the week off to a good start!
