Caramel Pumpkin Oatmeal Bars

You asked for a pumpkin recipe and here’s what I found! I was looking for something that would be good for breakfast and could be served warm after dinner with ice cream. These bars fit the bill.

They’re kinda chewy with hints of crunch due to the bits of caramelized caramel (is that a thing?). They’ve got a good bite because of the oatmeal. It’s like a coffee cake meets a bar. I can’t wait to have one with coffee!

We’re starting off pumpkin season with Caramel Pumpkin Oatmeal Bars!

Now…tell me…what’s your favorite slow cooker or instant pot recipe for fall. I need some inspiration!

Intentions for the Week

Happy Monday! It’s Sunday night as I type this. We spent most of the day at baseball and I AM WIPED! I had intentions to write some letters while I was at the game, but I didn’t get the chance. Adding that to the list this week! I also have a lot of housework to catch up on so I’m hoping I get in a good cleaning zone. Wish me luck! Here are some of my intentions for the week:

My Everyday Life: Week 38

Here’s what this past week looked like- My Everyday Life Week 38

Sometimes a simple breakfast is the best thing in the world.

I spent some time with my junk drawer this week.

This is what it currently looks like:

I’ve been doing my morning pages from The Artist’s Way. I wrote down all of the animals + bugs we see outside our house on a regular basis and started looking up what they each symbolize in The Illustrated Book of Signs & Symbols. It was a fun exercise.

Chicken Parmesan Meatballs

My child won’t eat chicken parmesan but he’ll eat Chicken Parmesan Meatballs so there’s THAT!

I mean… I put it on garlic bread and served it with some spaghetti.

HOW COULD YOU NOT??

This recipe from Alton Brown Everyday Cook is definitely going into our meal rotation. The meatballs are tender and delicious. It’s definitely a fun take on an old classic….one that might get your picky eater eating!
