Cucumber Cantaloupe Salad

Cucumber Cantaloupe Salad // shutterbean

I made this Melon & Mint Salad many years ago and I’ve been thinking about it lately. There’s something so nice about cold melon. It’s super refreshing on a hot day. Pair it with some crunchy cucumbers, a squeeze of lime juice, a dash of sea salt and some fresh mint and you have yourself  an amazing snack. Or if you’re feeling up to it….just make some Cucumber Watermelon Popsicles.

Shortbread Strawberry Crumble // shutterbean

Casey and I went to one of our favorite places for the weekend and we ate like it was our last weekend on Earth. One of the highlights was the  special dessert we ordered from Glen Ellen Star. And to think Casey wasn’t sure if he wanted dessert!  I knew it would be the first recipe I’d recreate when I got home and here it is!

Shortbread Strawberry Crumble // shutterbean

For this recipe, we take juicy strawberries and roast them.  If you’ve never roasted strawberries, you should definitely DO IT NOW. Then we top them with crumbled shortbread cookies when they’re hot from the oven. It’s the simplest/most rewarding dessert. It takes no effort at all! When it comes to Summertime eats, simple is always best. Let the strawberries SHINE.

I was in New York & Connecticut this week. Visiting my grandma & family.

We listened to oldies music and routinely smiled at each other.

Rice Krispie Balls with Sprinkles

Rice Krispie Balls with Sprinkles // shutterbean

Here’s the thing about Rice Krispie Treats. I love them and I almost always have the ingredients in my pantry. The problem is…. I totally forget about them. The other problem is that I make a tray of them and keep cutting off pieces from the tray and then THEY ARE GONE. So here, I kept the batch on the smaller scale. Scooped them out with a once inch cookie scooper and sprinkled SPRINKLES on top to make things a little more fun. They’re bite sized and delicious. Perhaps I should add this treat to my weekly meal prep?
