Grilled Chicken with Tomato Parsley Salad

This is one of my ideal Summer meals. Grilled Chicken with Tomato Parsley Salad! We eat some kind of combination like this a night or two each week during the summer. It’s really an excuse to eat grilled bread.

When the tomatoes are ripe and juicy this salad is a MUST MAKE salad. It’s kinda like bruschetta…but heartier!

The tomatoes pop with the capers, parsley, basil and Parmesan. They’re perfect with the lemony grilled chicken. When all is said and done, this meal is pretty healthy…which means we can go nuts on a batch of S’mores cupcakes!

Look at these Refrigerator Dilly Beans!

It’s that time of year when I don’t feel like making dinner when I come home from work. Wait…isn’t that like all the time?

I kid.

What I meant to say is that I don’t feel like making an elaborate dinner. I’m home from work and I am HUNGRY NOW.

I feel like opening the fridge, eating pickles, crackers, cheese, popcorn….. well… basically I feel like snack dinner.

Bust out a jar of refrigerator pickles, pull out some yummy salami, crackers, smoked salmon and cheese. Bonus points if we eat it on a picnic blanket. Or better yet, let’s have  Bloody Marys with a ridiculous amount of these dilly beans with a big bowl of potato chips. That’s totally a meal, right?

Summer Bucket List- 2015

Here’s what I plan on doing this Summer while Cooper is on Summer break—

  1. Paint the kitchen cabinets inside & out
  2. Reorganize the kitchen cabinets (sort/purge, etc.)
  3. Go to the library once a week
  4. Read at least two books (any recommendations?!)
  5. Trip to Tahoe with family
  6. Take Cooper jet-skiing
  7. Grow tomatoes in our backyard
  8. Go Bowling!!!
  9. Impromptu Road Trip
  10. Water Balloon Fight
  11. Kayaking with friends
  12. See a matinee in the movie theater w/ Cooper
  13. Have a big BBQ party
  14. Adventure in the Redwoods
  15. Oysters in Tomales Bay
  16. Make a few new boozy popsicle recipes
  17. Hit up a few beaches with Cooper
  18. Farmer’s Market Visits (weekly!)
  19. Spa day with my niece, Camden
  20. Reupholster bench for living room

I suppose if anything makes it onto my Instagram, it will be tagged with #shutterbeansummerbucketlist2015  I’m hoping to make a little photo album for Cooper with all that we did this Summer. Stay tuned!

I love lists, Friday!

I LOVE LISTS, FRIDAY!

  1. It must be so much fun to work in this office.
  2. Both Deb & Joy are making me want ice cream sandwiches in the worst way.
  3. I’ve been thoroughly enjoying reading about Heidi’s cookbook process.
  4. Food turned into art!
  5. I’m REALLY loving Thrive Market. The prices are great. I stocked up this week.

Mango with Chili Powder + Lime

Mango with Chili Powder + Lime // shutterbean

Take a bowl of chopped mango, squeeze some lime on top and finish with a sprinkle of chili powder and salt. Sweet, salty, spicy, tangy SNACK made in less than 5 minutes. Casey inhaled this yesterday…. which means it’s an EASY way to get someone to enjoy fruit!  Also- Mango Peeling Hack!  (why does that guy sniff at the end??!) (is he holding back the tears of joy?)
