Cinnamon Peaches with Cookies & Cream

I sliced some peaches the other day…and instead of eating them plain I thought about how much I’d like to have a piece of peach pie. But alas….no peach pie in sight. So, I sprinkled cinnamon sugar on top followed by oatmeal cookie pieces and then a dollop of vanilla ice cream (made with coconut milk). Pretty close to pie. Moscow Mule Popsicles

Wanna see something hilarious? Watch Oprah make a Moscow Mule (her & my favorite drink). She also does the same lime squeezing trick I do (when no one is looking). Learned that one from Alton Brown. Thanks, buddy.

So we have my/Oprah’s favorite drink here in popsicle form.

I took these pictures in the morning (before I had coffee!) and soooo wanted to finish the batch right there on the spot. I stared at the clock…counted the hours until happy hour and sadly wrapped up the popsicles for later. But here I am…typing this post out…dunking my second Moscow Mule Popsicle into an actual Moscow Mule…watching Oprah clips. It was worth the wait.
I’m gonna go finish that video now… It took them FOREVER to figure out it was a TWIST OFF.
Baked Corn & Tomato Risotto

I love to let my oven do all the hard lifting when it comes to weeknight dinners. It’s especially nice when I make something that makes a ton of leftovers that we can eat throughout the week. I had some corn and tomatoes leftover from a Farmer’s market haul last week and put them to good use with this Baked Corn & Tomato Risotto dish. I wanted to bake the risotto because I didn’t want to stand in front of the stove stirring….I just wanted to sit down on the couch and watch my newest guilty pleasure- Botched. REAL TALK.

The risotto is creamy, al dente and studded with chopped basil and Parmesan cheese.

We roast tomatoes in the oven while the risotto is baking and if you’re feeling frisky, add a poached egg on top. Dinner is served and you barely had to do anything. Win win.
