I was having a particularly challenging day yesterday so I came home and made applesauce. There’s something so therapeutic about stirring a large pot of stewed apples. Plus my house always smells amazing in the process. For a few days after I make a batch, I can be found eating applesauce from the tupperware container. I like it cold. I usually eat it standing up RIGHT IN FRONT OF THE FRIDGE. It’s rare that I put it in a serving bowl. To stretch out the last bit of applesauce, I add it to small curd cottage cheese (or Greek yogurt!) and sprinkle a little bit of cinnamon on top. It feels like dessert and could pass as breakfast. It’s a favorite of mine when it’s apple season.

I was pretty excited to put an outfit together around this Joy’s cover design. That cake up there? I’ve had it…it’s so freaking dreamy. Chocolate, peanut butter AND pretzels?? Oh my word. I didn’t want to just mimic the color scheme of this cover, I wanted to pick some things that I know Joy would like wearing. She loves a good clutch, she looks great in glasses, an unexpected lace situation is her favorite, she wears wedges like nobody’s business, and she loves her some gold. I should also mention she looks great in tight pants. I may have leg envy… My maj is always mixing some crazy patterns together, so that’s why I decided to pattern clash with the cardigan, scarf and clutch. Hope you love it, maj.

This weekend I survived an epic playdate, a party to watch the Blue Angels, and a fundraiser at school. In between all of that, I made two dozen cupcakes, a batch of blondies for dessert and this salad for you. I am falling asleep just typing that last sentence. Whew.
I also had an epic eating weekend which means this week I’m trying to start off on the right foot. What better way to balance the fact that I had two cheeseburgers in less than 24 hours? Salad for dinner— but not like a light salad. A hearty salad. A salad that uses the Honey Candied Walnuts I made last week. A salad that gives me the reset I need.
A salad that has tang, supple lettuce leaves, bits of chives, roasted beets and crunchy walnuts with a dijon vinaigrette . A salad for the beet lover in your life! That would be my mom 🙂
