

Here’s what this past week looked like:
I was in New York & Connecticut this week. Visiting my grandma & family.

I traveled with my dad. It was just us. It was so much fun road tripping and flying with him.
We listened to oldies music and routinely smiled at each other.
My cousins house is one of my favorite places on Earth.

Here’s the thing about Rice Krispie Treats. I love them and I almost always have the ingredients in my pantry. The problem is…. I totally forget about them. The other problem is that I make a tray of them and keep cutting off pieces from the tray and then THEY ARE GONE. So here, I kept the batch on the smaller scale. Scooped them out with a once inch cookie scooper and sprinkled SPRINKLES on top to make things a little more fun. They’re bite sized and delicious. Perhaps I should add this treat to my weekly meal prep?

I recently made this Ginger Mango Lime Sorbet in my Vitamix and it made me feel like a total wizard.

Frozen mangoes go into the Vitamix blender with a bit of spicy ginger beer, honey and fresh lime zest.

Minutes later you have an incredible frozen treat. No need to freeze (unless you’re making it ahead of time!). Just scoop out the sorbet from your Vitamix and serve. I can’t wait to play around with more flavors this summer! I’m thinking blueberry with a little bit of booze needs to happen soon.

Hello, Pea & Bacon Potato Hash!
Last year I was on a pizza kick. This year, I’m all about making really quick hashes.
I think it started when I had leftover roasted potatoes in one of my weekly Meal Preps.

What I like about hashes is that they’re a great way to clean out your fridge. I had a cup of fresh peas and 4 strips of bacon to use up, so I threw this hash together before I left for my trip. I also added some pesto and crumbled goat cheese for good measure.

Oh yeah and red pepper flakes because I love spice. Talk about Easy Gourmet! Hopefully this makes you consider having cooked potatoes in your fridge every week. You’re seriously a few minutes away from an incredible dinner…breakfast or lunch.
