Lunch Ideas- ROUND TWO!

Hi! It’s time to clear out my cell phone, so welcome to Round Two of my Lunch Ideas for work!

On this day at work, I brought some some leftover chicken & kale noodle soup with an orange. The next day I added a few dashes of hot sauce, chunks of avocado & cilantro and it turned into a Mexican themed lunch! Olé!!

Last year’s resolution: JUICE MORE!

Ahhh resolutions! Did you come up with some good ones? I’m still trying to think about what I want to accomplish in 2011. I already have my 31 comes before 32 list to keep me busy, so I’ll have to get back to you on that!

In 2010, I made these two:

1.  Juice more.

2. Go on more hikes with my family.

I took about 3 hikes in 2010. It was more than I had anticipated, but not as much as I’d hoped for.  Hopefully I will hike more in 2011 because I love being outdoors.  Either way, I know being more active is making its way onto my 2011 list.

Juice more! I’m happy to report that I did JUICE MORE in 2010. I came up with a few concoctions besides my favorite go-to juice, Carrot Apple Ginger.  In the process, I enjoyed playing with fonts throughout the year on my juice posts. It kept my brain active & helped me channel my love for typography.

Farro Salad with Cranberries

Dear Friends Who Love to Chop Food,

Let me start by saying that it’s so awesome to find people who also enjoy the act of cutting up fruits & vegetables for recipes. Some people think we are weird, but who really cares?! I know they appreciate the heck out of us when we step up to bat in their kitchens. Isn’t it just terrible to watch someone hack up a carrot and know that they’re not even enjoying it? Blasphemy!

Ever since I took a knife skills class, I’ve been excited to find recipes that test out my skills. This recipe will totally fulfill your chopping quota for the day. There’s onions, celery, almonds, AND parsley.  It’s fun, awesome, and you are going to love it.  The best part? The end result is fabulous! You’ll end up with a tangy sweet farro salad with lots of crunchy fun bits.  I should mention that it’s a healthy dish–great for vegans too! Your knife is begging you to sharpen it and take it for a spin. Please enjoy, and thanks again for your chopping support.

Green Energy Shake

GREEN ENERGY SHAKE!!!

For some reason when I think GREEN ENERGY SHAKE, I imagine Oprah screaming it.

“Please welcome GREEEEEN ENerGYYYYY SHAAAAAAAAKE!!!!”  And through the side door, the shake shuffles onto the brightly lit stage, spotlights are flashing and Oprah sweeps up the glass, pulling the straw to her mouth. She’s only supposed to take a small sip because she’s got a paragraph to read on the teleprompter, but she’s so shocked at how good it tastes, she takes an enormous gulp. There’s a pause on live TV…. and suddenly she’s rocking back and forth, raising her hands to the sky, praising this healthy concoction. It’s totally green, yet tastes sweet & refreshing! She surprised how good the dates make it!  “Hallelujah,” she screams!

YOU. CAN. BLEND. KAAAAAALE!

Quick someone write a book about it, cuz it’s totally going on the book club!

Homemade Cheese Ravioli

Working on your resolutions for 2011?

In addition to DRINK MORE WATER, you should add MAKE PASTA FROM SCRATCH to your list. It’s definitely a life changer. You will never take fresh homemade pasta for granted again. If you find yourself really digging the experience, you might take it a step further and make a batch of these scrumptious cheese ravioli. Wanna go crazy? Double the recipe and make it for your family on Christmas Eve. Having survived the crazy, I’d make sure you have about 4 hours of time allotted to do so. It’s a lot work, but totally WORTH it. Don’t let my mom tell you any different!

But let’s start off simple. Pasta dough.
