What’s a pupusa?  It’s like a very thick stuffed corn tortilla. They’re delicious and I made them for the first time when I shot all of the recipe cards for One Potato.   These ones have mushrooms in the dough and are stuffed with cheese which melts into GOODNESS.

They’re incredibly filling too!

I like them for breakfast with eggs. Lunch and dinner with a salad and dipping things! I can make the dough a day ahead of time so I can make them on the fly. They’re my new favorite thing.

I’m writing this Monday morning with a cup of coffee. I had a nice Mother’s Day. It included a bike ride, a trip to Home Depot, mint juleps and takeout. Didn’t get to meal prep but I’ll probably do pieces of it throughout the week when I have time.

My Everyday Life Week 19

Here’s what this past week looked like- My Everyday Life Week 19:

Last Sunday I taught a Meal Prep workshop for Tammi’s Ray of Light Community over zoom in my kitchen. It was a trip to be teaching in the exact spot I learned how to cook with my Mom. I know she would be proud.

Mother’s Day Things

My Everyday Life: Week 20

Sometimes when I’m in a wave of grief, I start searching for things on my website or photos on my phone because I like to see where technology leads me.  It’s one of my favorite ways to invite magic into my life and BOY have I left a trail of it!

Yesterday I wanted to see what would come up when I searched for “SHUTTERBEAN MOTHER’S DAY” and because I’m definitely missing my mom and my Dad is getting married next week so my feelings are all complicated and confusing. Grief wave! The oldest post I found was on my first Mother’s Day in 2009.
