Happy Monday, friends! I had a busy weekend. I did prep and I am gearing up for something fun this week. Are you free Friday night?

I started a new column called Magic Mail. I’m sharing magic mail from my P.O. Box from readers like YOU there. I’m going to try to do it every week or so.

Camelia season has started here and I am HERE FOR IT. Pops of pink everywhere? Yes please.
Starting my Sunday meal prep ritual.
Filled the fridge with goodness.
One of the best things about meal prep is that it can help with impromptu hangouts. Lisa came over to do some dance videos and we had some healthy snacks at the ready afterward.
Listening to my friends chat & making notes while I fold laundry.
These Chicken Cilantro Meatballs made me realize that I need more meatballs in my life.
(What a sentence!)
Seriously though, they’re a good thing to have meal-prepped for the week. You can add them to rice or a noodle salad. I also think they would be fun in some type of ramen or soup. To tell you the truth, I just eat them cold because I’m impatient and it’s a quick way to get protein.
Here I paired them with my cucumber sesame salad (I cut the cucumbers differently this time). It’s a hearty meal that won’t make you feel like crap afterward. The meatballs are packed with flavor thanks to the cilantro & green onions. I hope you love them too.
Hi friends! Last week I worked out 5/7 days and that’s BIG for me. I’ve been using some of my favorite workout videos to get me through and marking off the days on my monthly printable planner has been a BIG HELP. I love seeing boxes filled in!
I did meal prep yesterday while everyone was watching the Super Bowl. I did watch the halftime show and then was so impressed by how fast all of the Rhianna memes flooded my social media. What a time to be alive!
