Busy weekend for us. My Dad got married! Cooper had baseball and won his tournament. I AM SO SLEEPY and need to catch up on some rest this week. Anywho!

Snuggling with my littlest boy on Mother’s Day. Huggy makes me feel like I’m holding a baby again and I love that.

I asked my Mom for signs all week.
Last time I was in this church, it was for my Mom’s funeral.
My Dad got remarried!
There was a car show outside the church. Cooper was excited.

New breakfast/lunch/dinner recipe alert: Mushroom Pupusas.
What’s a pupusa? It’s like a very thick stuffed corn tortilla. They’re delicious and I made them for the first time when I shot all of the recipe cards for One Potato. These ones have mushrooms in the dough and are stuffed with cheese which melts into GOODNESS.
They’re incredibly filling too!
I like them for breakfast with eggs. Lunch and dinner with a salad and dipping things! I can make the dough a day ahead of time so I can make them on the fly. They’re my new favorite thing.

I’m writing this Monday morning with a cup of coffee. I had a nice Mother’s Day. It included a bike ride, a trip to Home Depot, mint juleps and takeout. Didn’t get to meal prep but I’ll probably do pieces of it throughout the week when I have time.
