My child saw the recipe I marked for Mocha Meringues on our kitchen table and was like, “YOU HAVE TO MAKE THESE!” He didn’t realize that I pulled that recipe for him. He loves anything coffee-flavored and will eat a whole container of meringues from Trader Joe’s in one sitting if I’m not there to intervene. It’s happened before and that little bugger didn’t save me ONE.
I made them earlier this week and they were well received!
They’re light and crisp. The flavor is amazing. It’s like fudge that melts instantly in your mouth. They only lasted 24 hours in my house… It would have been less time if I didn’t tell my meringue-obsessed child I had to take more pictures of them for this post. I can’t get him to eat eggs, but I can get him to eat a whole batch of meringues. Go figure!
It’s another Monday! I had a nice visit with my friend Nicole and her husband & baby yesterday. Cooper had a playdate with a classmate. I cleaned out the fridge and did meal prep. We are trying to lay low as we don’t want to get sick and jeopardize Cooper not being able to go to school. What a time to be alive! Meal prep this week!
December! Wow. I am glad it’s over and we are onto a new year. The holiday season is a tough time for me because it makes me miss my Mom a lot. It was also such a tricky month with the surges of COVID. A lot of plans got canceled and that was a huge bummer. I am grateful I got to spend a lot of quality time with my boys! Here’s what my December looked like in my currently workbook. (I’ll have more in the shop next week but you can get one here too).
I used black gesso to make this page black! Then I drew the tree with white paint pens!
