This Creamy Balsamic Vinaigrette has been included in #shutterbeanmealprep several times and I always get requests for the recipe. It’s a good one too. It’s a vinaigrette that will make you want to have a salad.
The secret behind the creaminess is soaked cashews. They get blended with shallots, balsamic vinegar, a touch of dijon (I used grainy!).
It definitely gives me an old-school Italian restaurant salad vibe.
It’s so good, I have thought about drinking it…
Hello, MONDAY!
I can’t believe we are 10 weeks into this year. Whoa. The weekend was filled with baseball, basketball, a block party and we celebrated Casey’s birthday. Baseball tournament meant no time for meal prep. Womp womp! We are about to eat birthday some cake so I am going to keep this short! Let’s figure out what our Intentions for the Week are!

So much happening in the world in February. We are experiencing some heavy times and then we are also deep in life here (baseball season started!). It was really hard to keep good boundaries with my phone usage. There’s the urge to feel connected (know what’s happening in the world) and the need to be disconnected (to live in the present). I set limits and timers.
My stress/grief/sadness/feelings went into cleaning my junk drawer (much overdue) and I spent a lot of working in my yard and zen garden. Spring is around the corner.

Valentine’s always makes me think of my Mom. She showed me what unconditional love felt/looked like and it’s been hard to live without that kind of love. I am slowly learning how to give myself unconditional love.
