I’m not going to lie, September kinda kicked my butt. So much to process. We got back inro the swing of things with school, worked on making new routines, traveled to baseball tournaments, outdoor education for Cooper, a business trip for Casey, two mammograms, worrying and trying not to worry- the whole shebang.  I did have some really great visits with friends and I am grateful for that!

In September, I learned how important it is to slow down and connect with myself. I am working on paying attention to how I feel in my body instea of distracting myself with outside influsence. I can connect better with others when I connect with myself first.

Big weekend here. Cooper turned 13, played in, and won a baseball tournament.  I was away from the kitchen all weekend and didn’t get a chance to meal prep. I hope I can find a few pockets of time to clean out my fridge this week because IT REALLY NEEDS IT.  Let’s not waste any time and get down with my Intentions for the Week!  Here they are:

WE HAVE A TEENAGER NOW!!! Cooper turned 13 yesterday!!!

New Recipe: Zucchini Rice Gratin!

We almost always have leftover rice in the fridge because my child LOVES RICE and it’s a very adaptable ingredient to have in my meal prep repetoire.

If you take some tomatoes from a friend and some zucchini that didn’t make its way into fritters, you can easily prepare a Zucchini Rice Gratin with the addition of eggs and cheese.

When I served up a bowl, it reminded me of arancini (fried balls of risotto with cheese) but not fried and waaaaay less time-consuming. If you’re a fan of crispy rice and roasted vegetables, this makes an amazing side dish served with your protein of choice (I’d do sausage) or a main dish paired with a salad. Either way, it’s a reminder that rice is one of the ultimate kitchen shapeshifters. No wonder it’s always a staple in the Benjamin household.
