My brother-in-law James came over this weekend to help Casey make a picnic table. I AM SO EXCITED! I HAVE WANTED ONE FOREVER! I spent the weekend getting caught up around the house, celebrating a friend’s birthday, and getting ahead of the week. It’s Sunday and I am getting ready for the week by writing down my intentions. If you’re looking for a hearty/easy weeknight dinner for the vegetarian (possibly you!) in your life, this One-Pan Vegetarian Taco Pasta recipe is right up your alley.  The real flavor MVP comes from browning soyrizo as the base.

In case you’re new here, Soyrizo is chorizo made out of soy. I mostly use it in taco form but I thought I’d try something different with pasta and here we are!

It is PACKED with flavor and is the base of this dish.

Intentions for the Week- Week 34 in 2021

​​Happy Monday friends!
 
We spent the last weekend of Summer (before the first full day of school tomorrow) in Carmel Valley. It was relaxing. We swam.  I did art. I tried to make tacos but I forgot the corn tortillas in my kitchen at home! We are back at home and unpacking and it’s time to write down my Intentions for the Week!  Here we go!
