Zucchini Rice Gratin

New Recipe: Zucchini Rice Gratin!

We almost always have leftover rice in the fridge because my child LOVES RICE and it’s a very adaptable ingredient to have in my meal prep repetoire.

If you take some tomatoes from a friend and some zucchini that didn’t make its way into fritters, you can easily prepare a Zucchini Rice Gratin with the addition of eggs and cheese.

When I served up a bowl, it reminded me of arancini (fried balls of risotto with cheese) but not fried and waaaaay less time-consuming. If you’re a fan of crispy rice and roasted vegetables, this makes an amazing side dish served with your protein of choice (I’d do sausage) or a main dish paired with a salad. Either way, it’s a reminder that rice is one of the ultimate kitchen shapeshifters. No wonder it’s always a staple in the Benjamin household.

We spent the weekend up in Windsor for a baseball tournament. Unfortunately, it didn’t leave me time to do some meal prep! We were wiped out! Cooper has outdoor education this week (yay Cooper!) so we are spending our Sunday night getting him all packed and ready for that. Time to sit down and write down my Intentions for the Week- Here’s what’s up!

Autumn Bucket List 2021

We are into Autumn already as of September 22nd! WEEEEEEEEE! It’s my favorite season.  I spent some time this week writing down my Autumn Bucket List 2021 in my Currently Workbook (2022 version coming soon!). 

Here are some of my intentions for the season!

  • Dinner party with friends? (pandemic permitting?)
  • mushroom soup!
  • read a book or two (just started Conscious Loving)

  • make apple pie
  • take photos of my office
  • driving adventure
  • fall capsule wardrobe (going through my closet!)
  • go for more hikes
  • farmer’s market (take photos!) 

I am going to be gathering some seeds too!

All you need is to get your sourdough starter fed, some flour, and water and you’re good to go. It’s less time-consuming than making sourdough bread and you can make a legit dinner with it!
